Pressure Cooker Chicken Stock

Ingredients

  • 4 pound chicken thighs and legs
  • 1 tablespoon tomato paste
  • 1 tablespoon flour
  • 1 teaspoon dried thyme
  • 2 teaspoon dill
  • 1 onion
  • 14 celery stalks
  • 3 quart water
  • 1/4 cup white wine

Instructions

    Add chicken to roasting pan, cover with olive oil, tomato paste and flour

    Roast at 425 for 1 hour

    Heat pressure cooker on medium heat

  4. 4

    Add onion, dill, thyme and celery to pressure cooker. Stir occasionally, its ok if it gets dark.

    Add chicken to pressure cooker

    Add wine to pressure cooker

    Add water to pressure cooker

    Seal pressure cooker and cook for 2 hours on high.
