Chicken Vegetable Soup

A comforting, hearty chicken vegetable soup brimming with tender poached chicken, fresh vegetables, and aromatic herbs. Perfect for meal prep or a nourishing family dinner.

Ingredients

  • 1 onion (large finely diced)
  • 6 carrots (carrots, nicely diced)
  • 8 celery stalks (diced)
  • 1 teaspoon dijon mustard
  • 2 tablespoon dill (finely chopped)
  • 1 Salt & Pepper (to taste)
  • 1 tablespoon butter (unsalted please.)
  • 1/2 pkg Ditalini Pasta (or however much you like)

Instructions

    In large dutch oven Add butter, mustard, dill, salt, pepper and any other spices you like

    Add Onions, carrots, celery and saute for a few minutes

    Add stock to dutch oven and bring to rolling boil and then back down to a simmer

  4. 4

    Taste and adjust spices - you will likely need to add salt.

    Add Ditalini Pasta, you'll need to simmer this until its cooked 20-30 min

    Add Poached Chicken to soup - let this simmer for 10 minutes on low do.not.boil!

    Serve or portion out and chill
